Fenugreek seeds, known for their rich nutritional profile, combined with the goodness of ghee and jaggery, make these laddoos an energy-boosting snack perfect for the cold weather. Recipe by Chef Sharad Tenguriya – Executive Sous Chef, Fairmont Jaipur, this classic treat is a blend of taste and wellness.
Ingredients:
- Methi seed powder: 250 g
- Milk: 1 L
- Atta (wheat flour): 300 g
- Ghee: 50 g
- Gond (edible gum): 50 g
- Pista (pistachios): 50 g
- Cashew: 50 g
- Almond: 50 g
- Kas kas (poppy seeds): 50 g
- Jaggery: 250 g
Method:
- Begin by frying the gond in ghee and set it aside.
- Take the methi powder and cook it in milk until it is fully absorbed.
- In the same pan with the remaining ghee, roast the wheat flour until it turns golden brown, then add the ginger powder. Continue roasting for a little longer, then remove from heat and set aside.
- In a separate pan, add 4 tablespoons of water and melt the jaggery. To check the consistency, drop a small amount on a plate. If it does not spread and holds its shape, the jaggery is ready.
- Combine all the ingredients with the melted jaggery, mixing thoroughly. Let the mixture cool slightly. Once it is cool enough, take small portions and shape them into laddoos by rolling them in your palms.
