Avocado and Lime Christmas Cake (No-Bake)
Bright, creamy, and refreshingly festive, this no-bake cake blends zesty lime, smooth avocado, and a buttery biscuit base for a show-stopping holiday dessert. Light, luscious, and full of seasonal cheer, it’s perfect for Christmas entertaining.

Ingredients
- 300g cream cheese
- 300ml liquid cream
- 2 avocados
- 2 limes
- 200g sugar
- 3 teaspoons gelatine powder
- 250g biscuits
- 100g butter
Topping options: Rosemary sprigs, redcurrants, Christmas sprinkles
Instructions
- Crush the biscuits, add the melted butter, and mix well.
- Cover the base of the mould with the biscuit dough.
- Hydrate the gelatine in water and set aside.
- Grate the limes and squeeze out the juice.
- Peel the avocados and scoop out the flesh.
- Mix the cream cheese and sugar until creamy.
- Add the avocado, lime juice and lime zest and blend until smooth.
- Heat the gelatine in the microwave until dissolved.
- Add the cream and gelatine to the cream cheese and mix until well blended.
- Pour over the biscuit base.
- Place in the fridge for a few hours until firm.
- Remove from the mould and decorate to taste.
Green Avocado Mousse
This vibrant green avocado mousse combines fresh basil and lemon for a light, creamy delight that highlights avocado’s natural flavour and velvety texture—perfect as a festive starter or elegant canapé.

Ingredients
- 1 fresh avocado
- 2 sprigs of fresh basil
- 200 ml cream or alternative
- Juice of 1/2 lemon
- Salt
- Ground cumin
- Water (optional)
Topping options:
Cherry tomatoes, fresh basil, black pepper, edible flowers, sprouts, microgreens, crispy onion
Instructions
- Peel the avocado, remove the stone and cut it into pieces.
- Remove the leaves from the basil stalks.
- Place both ingredients in a food processor.
- Add the cream or alternative, lemon juice, salt and cumin to taste.
- Blend to a creamy texture.
- Pour into clear glasses (using a piping bag).
- Decorate to taste.
