For tempering heat 3 tbsp cooking oil in a pressure cooker, add mustard and cumin seeds, curry leaves, bay leaves. Stir well to combine.
Now add the ground masala saute for one minute add chilli powder, turmeric powder, salt and raw jackfruit cubes.
Mix all the ingredients well, cook for 2 minutes.
Now add 2 ½ cups hot water. Mix everything well. Cover the pressure cooker and cook curry for 3 whistles and turn off the heat.
Allow pressure to release naturally. Once pressure has released, turn off the heat. Open the lid, add in the freshly chopped coriander.
Check the salt and spices and adjust accordingly.
Transfer to a serving bowl and serve hot.
Raw jackfruit curry is now ready!! Serve along with Jowar Bhakri or chapati and sliced onion.
