Raksha Bandhan Special: Palak Puri and Cabbage Curd Salad

Raksha Bandhan festival signifies the love and affection between brothers and sisters. This day is all about gifts, sweets, reunion and celebrations. Raksha Bandhan is on 21st August, 2013 Wednesday this year. Let’s celebrate this special day by preparing delicious menu and make your brother happy. Here is simple and scrumptious brunch menu which will surely impress your brother and family members.

Palak Puri

Ingredients:

  1. ½ kg fresh spinach (washed and chopped),2 cup wheat floor,½ cup besan,2 tbsp hot oil
  2. 1 tbsp garlic paste,1 tbsp teel,½ tbsp cumin powder,2 green chilies crushed,½ cup curd
  3. Salt to taste, Oil for deep fry

Procedure:

1.Blanch the spinach leaves in boiling water now remove the spinach and blend it till it become fine pate.

2.Blend garlic paste and chilies with spinach.

3.Mix spinach paste in to the wheat flour and besan add salt, turmeric, cumin seed powder, teel, 2 tbsp hot oil and curd

4.Make soft dough of above mixture. Make tight dough; do not add water at a time.

5.Keep the dough aside for 15 minutes. Covered wet cotton cloth.

6.Knead the dough again and make small equal lemon sized balls.

7.Now heat the oil for deep fry puri’s

8.Now roll the balls and deep fry till it golden brown.

Cabbage Curd Salad

Ingredients:

1 cup Chinese style chopped cabbage,1 cup fresh tight curd,2 pinch turmeric,2 pinch black pepper powder,Salt to taste,1 pinch sugar,1 green chili (finely chopped),½ tbsp cumin seeds,4 curry leaves,4 tbsp oil

Procedure:

1.In a pan heat the 2 tbsp oil add chopped cabbage stir continuously for 5 minutes. Now turn off the flame and add turmeric.

2.Pour the mixture in a bowl; let it cool down for 10 minutes.

3.Meanwhile add salt, sugar, black pepper in the curd and mix well.
Now add curd mixture in to the cabbage and mix well.

4.In small kadai heat 2 tbsp oil add cumin seeds, curry leaves and chili fry till it golden brown.

5.Pour oil in cabbage curd mix well.
