Holi is known for its colors as well as scrumptious recipes. Several recipes like Dahi Bhalla, Bhang Pakoda, Papadi and Gujia, Thandai, Puran Poli are special dishes for Holi.
Puran Poli is a delicacy prepared on any festive occasion in Maharashtra. It is scrumptious mouth watering and irresistibly Maharashtrian festive sweet. It just melts in your mouth. It is a must to make Holi in Maharashtrian home. It is said as Holi re holi Purnachi Poli.
Ingredients
1 cup chana dal
1 cup jaggery
1 tbsp cardamom powder
1/2 tbsp nut mug powder
2 cups wheat flour
2 tbsp oil
1 cup water
Salt to taste
Lots of ghee
Method
Knead a smooth dough similar to one for making chapati, using wheat flour, oil, salt and sufficient water keep aside.Pressure cook chana dal with 2 cups of water and pinch of salt up to 10 whistles.If u have water in excess pour them out and keep it aside.Now add jaggery to this dal and stir continuously on low flame.
Add cardamom and pinch of nutmeg powder to the mixture and continue stirring if the mixture becomes too stiff you could add reserve water to it or if its runny continue stirring it.Take a lime size dough and roll it as chapati but medium-sized.Now roll out the dough and place one dal ball onto the centre of the chapati, bring up sides of the dough and pinch to completely encase the dal ball. Twist and remove excess dough.
Flatten the filled ball and dust with chapati flour and gently roll out the puran poli.Heat up a pan on a medium heat roast puranpoli from both the sides till it gets nice golden spots.Once puran Poli is about to done apply ghee.Serve hot with a dollop of ghee over it.Preparation time 10 minutes, cooking time 1 hour, serve 2 people.
