Fast food is not always fatty food. If you make it at home with proper nutritional value, it would be rather healthy food. Veggie Patties can be made with potato, chickpeas, black beans, lentils and with different vegetables. You can deep fry, shallow fry or you can bake, grill these patties. Veggie patties are rich in protein and fiber so it would be healthy snacks option for you and your family.
Potato stuffing
Ingredients
2 slices of cheddar cheese
1 cup boiled and mashed potato
½ tbsp ginger, garlic paste
1 medium onion (finely chopped)
½ tbsp black pepper powder
Salt to taste
1 tbsp green chilly (finely chopped)
¼ cup green pepper chops
4 tbsp olive oil
½ cup dry bread crumbs
Procedure
Mix together all above the ingredients except olive oil, make small patties, brush olive oil both the sides of patties, pre heat griller and golden brown both the sides.
Mix veg Pattie
Ingredients
Carrot granules 1 bowl
Cabbage 1 bowl
Beet 1 bowl
Green peas mashed 1 bowl
Potato boiled and mashed 1 bowl
Onion ½ bowl
Ginger garlic paste 1 tbsp
Green chili finely chopped 1 tbsp
Salt to taste
1 tbsp cumin seeds
2 tbsp sesame
1 bowl bread crumbs
2 tbsp corn flour
4 tbsp all-purpose flour
1 bowl water
Oil for deep fry
Procedure
Heat the 2 tbsp of oil add cumin seeds, green chili and garlic ginger paste, saute for 5 seconds, add onion saute for 1 minute, add remaining vegetable except potato, saute for 5 minutes, turn off the flame, add salt , sesame, potato, half bowl of bread crumbs and corn flour mix well. Make small patties out of it. keep it aside, in a water bowl add all-purpose flour and make thick batter now deep the Pattie into batter then immediately deep into the bread crumbs. Make round shape by pressing Pattie, deep fry Pattie golden brown. Repeat the procedure for remaining patties.
Black Bean Pattie
Ingredients
1 cup black beans, drained
¼ cup boiled and mashed potato
1 small onion (finely chopped)
2 green chilies (finely chopped)
1 tbsp garlic, ginger paste
½ tbsp black pepper powder
Salt to taste
2 tbsp olive oil
½ tbsp vinegar
1 tbsp lemon juice
Procedure
Wash and blend black beans, take large mixing bowl and combine all the above ingredients except bread crumbs, mix well, make small patties and roll into bread crumbs, bake burgers at 375 degrees for 30 minutes.
Mixed herb Pattie
1 bowl chickpeas
1 bowl white kidney beans
2 tbsp raw sunflower seeds
½ cup dried bread crumbs
1 tbsp garlic, ginger paste
3/4 cup lemon juice
½ tbsp black pepper powder
Salt to taste
4 tbsp olive oil
2 tbsp mixed, dry herbs
½ cup fresh spinach (finely chopped)
4 tbsp dried parsley
2 tbsp all-purpose flour
Procedure
In a large mixing bowl add washed chickpeas and white kidney beans; mash all the beans by hand make it sticky mixture, add chopped spinach and remaining ingredients, mix well , make small Pattie, preheat oven at 375 degree. Grease a baking sheet bake for 20 minutes.
Cheese Pattie
Ingredients
½ cup cheddar cheese
1 cup boiled and mashed potato
1 cup steamed and chopped broccoli
½ cup onion (finely chopped)
1/2 tbsp garlic paste
1 cup dry bread crumbs
4 tbsp olive oil
Salt to taste
Procedure
In a large mixing bowl add mashed potato, broccoli, cheese, onion, garlic paste, salt and ½ cup bread crumbs mix together well. Make small patties out of it roll the patties into remaining bread crumbs, heat a pan add 1 tbsp oil shallow fry patties.
Note-(add more bread crumbs or corn flour if mixture becomes loose)
